Crunchy Floret Salad

Even my kids love this one.

Crunchy Floret Salad

3 cups fresh broccoli florets

2 cups fresh cauliflower florets

1/2 lb. sliced bacon, cooked and crumbled

1 cup light mayonnaise

2 TBSP. sugar

2 TBSP. cider vinegar

1/4 tsp. salt

1 1/2 cups (6 oz.) shredded cheddar cheese

In a large bowl, combine the broccoli, cauliflower and bacon. In a small bowl, whisk the mayonnaise, sugar, vinegar and salt. Pour over the salad and mix well. Cover and refrigerate until ready to serve. Stir in the cheese just before serving.

Makes about 6-8 servings
